Cajun Chicken Zucchini Noodles

Ingredients:

  • 2 medium zucchinis (spiralized)
  • 1 boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 red bell pepper, sliced
  • 1/4 cup red onion, sliced
  • Salt and pepper to taste
  • Optional: chopped parsley or lime wedges for garnish

Preparation:

  1. Rub the chicken breast with olive oil and Cajun seasoning.
  2. Grill or pan-cook the chicken over medium heat for 6–8 minutes per side, or until fully cooked. Let rest, then slice.
  3. In a skillet, sauté bell pepper and onion until soft (about 3 minutes).
  4. Add zucchini noodles to the skillet and cook for another 2–3 minutes.
  5. Toss sliced chicken back into the pan. Mix and heat through.
  6. Garnish with parsley or a squeeze of lime if desired.

Essential Tip:
Cook zucchini noodles briefly to prevent sogginess and preserve nutrients.
