How to Make Healthy and Delicious Meals with Zucchini Noodles
Cajun Chicken Zucchini Noodles

Ingredients:
- 2 medium zucchinis (spiralized)
- 1 boneless, skinless chicken breast
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- 1/2 red bell pepper, sliced
- 1/4 cup red onion, sliced
- Salt and pepper to taste
- Optional: chopped parsley or lime wedges for garnish
Preparation:
- Rub the chicken breast with olive oil and Cajun seasoning.
- Grill or pan-cook the chicken over medium heat for 6–8 minutes per side, or until fully cooked. Let rest, then slice.
- In a skillet, sauté bell pepper and onion until soft (about 3 minutes).
- Add zucchini noodles to the skillet and cook for another 2–3 minutes.
- Toss sliced chicken back into the pan. Mix and heat through.
- Garnish with parsley or a squeeze of lime if desired.
